This is my neighbor's family favorite, and now one of my family's favorite too.
1 package manicotti shells
FILLING:
1 cup chopped spinach
1 8 oz pkg cream cheese, softened (I actually used ricotta and it was delicious)
1 egg
1 cup mozzarella cheese, grated (reserve a little for the topping)
2 cups cheddar cheese, grated
1/4 cup parmesan cheese, grated (I just used the canned kind)
SAUCE:
1 lb Italian sausage, browned and drained
1 jar of your favorite spaghetti sauce
1/4 jar water
Boil manicotti noodles according to package directions. Lay out on foil to cool. In the meantime, prepare sauce in a saucepan on the stove. Combine filling ingredients in a large bowl. Stuff manicotti noodles with filling. Use a knife to fill them, or a pastry bag with a large tip. Put a little sauce in the bottom of a 9 x 13 baking dish. Place stuffed manicotti shells in dish, and cover with remaining sauce. Bake at 350 degrees for 40 minutes, uncovered. Sprinkle with remaining mozzarella cheese and bake 5 more minutes. (My family thought they would have liked more cheese on top, so next time I will probably use another 1/2 cup of mozzarella on the top instead of just saving a little out. But EVERYONE loved this)
