Do you have a sandwich maker that never gets used? So did I in college, but all it took was a late night, a hungry stomach, not much in the fridge, and an urge to use the sandwich maker to come up with this:
Bisquick (prepared into pancake batter)
grated cheddar cheese
1/2 can of Cream of [anything] soup
1/4 cup sour cream
salt and pepper to taste
leftover cooked chicken, shredded
Heat sandwich maker. Pour in a little batter (it doesn't take a lot.) Sprinkle with cheese. Mix soup and sour cream together and season with salt and pepper (and anything else you want to try.) Put a dollop of the mixture on top of the cheese, and spread a little chicken on top of that. Top off with more pancake batter and close the sandwich maker. This is where patience is necessary... wait until it is golden brown. Believe me, the light will come on before it really is ready, but if you wait a little longer, your patience will be rewarded. The golden crust is delicious! The outcome is something like a crepe and a Hot Pocket, and oh, so good.
