Chicken Chili

Title: Chicken Chili
Description:Tami's legendary recipe
Ingredients:
2 cans chicken breast chunks w/ juice (or 1-2 cooked and shredded fresh chicken breasts) - ok seriously, doing the fresh chicken takes the EASE out of this which is the whole purpose.
1 med onion chopped and browned (or minced onion)
1 can whole corn (drained)
1 - 28 oz can diced tomatoes w/ juice
2 cans cream of chicken soup
2 cans ranch style beans or kidney beans
1 tsp salt
1 tsp pepper
1 tsp garlic powder
1 tsp or less chili powder

Directions:Combine and heat thoroughly. Serve with cheddar cheese, tortilla chips, lettuce, sour cream. You could also cut corn tortillas into strips and add - they soften. Or you could add cheese quesadillas. I use mostly tortilla chips and dip them into it.
Number Of Servings:6+ adult-sized
Preparation Time:5-15 minutes

Cream of Potato Soup

6 potatoes pealed and crushed
2 medium onions-chopped
½ cup chopped celery
½ cup shredded or grated carrots
4 chicken bullion cubes
1 Tbsp parsley
6 cups water
½ cup butter
1 Tbsp salt
½ tsp pepper

Cook above ingredients in a crock pot for 7 hours then add 1 can evaporated milk and cook 1 more hour. Before serving add shredded cheese and bacon bits.

Optional additional add-ins:
Corn
Peas

Taco Soup

1 lb. Ground beef
1 medium onion (chopped)
½ pkg mild taco seasoning mix
1 (16 oz) can kidney beans, drained and rinsed
1 (28 oz) can stewed tomatoes
1 (8 oz) can tomato sauce
Tortilla chips
Grated Cheese

Brown ground beef in pot with onions. Add taco seasoning, corn, beans, tomatoes, and tomato sauce. Simmer 20-30 minutes. Serve with tortilla chips, grated cheese and a dollop of sour cream.

Spanish Lentejas

Before you all start freakin' out and say, "Gross, I see "lentils" in the recipe!" hear me out:

This has got to be one of the EASIEST and TASTIEST cold-weather-day dinners ever invented! You don't even have to measure the ingredients and it will turn out JUST RIGHT.

Ingredients:

Lentils (I use about 3 cups. Oh, and don't worry about soaking them first.)
Potatoes (cubed)
Carrots (cut into bite-size pieces)
Onions (sliced)
Pepperoni stick (cut into bite-size pieces)
Salt and Pepper (to taste)

Directions:

Throw it all together in a big pot. Fill with water or broth until covered. Bring to a boil and cook until lentils are soft (about 45 minutes.) It's toooooo yummy and it's guaranteed to warm you up!

Dumplin' Noodle Soup

2 beaten eggs
1 c. flour
1 tsp. salt
1 tsp. baking powder
* Mix the above and cut into fairly large noodles (will double in size)

1 whole chicken or 3-4 chicken breasts
2 qt. water
1 tsp. celery salt
1 tsp. onion salt
(chicken boulion if needed for added flavor)
* Boil the above for 1 1/2 hours; debone chicken, and skim fat

Add the following to chicken broth:
2 diced celery stalks
2 carrots, diced
1/2 to 1 onion, diced
noodles
* Boil 20 minutes

Cream sauce:
3/4 cup butter
3/4 cup flour
1 qt. milk
* Melt butter and add flour. Mix together and slowly add milk. Stir until thickened. Add to chicken soup mixture.

This is a delcious and creamy soup -- it tastes great on cold nights! Simple and easy to make, and it freezes good too.
