Before you all start freakin' out and say, "Gross, I see "lentils" in the recipe!" hear me out:
This has got to be one of the EASIEST and TASTIEST cold-weather-day dinners ever invented! You don't even have to measure the ingredients and it will turn out JUST RIGHT.
Ingredients:
Lentils (I use about 3 cups. Oh, and don't worry about soaking them first.)
Potatoes (cubed)
Carrots (cut into bite-size pieces)
Onions (sliced)
Pepperoni stick (cut into bite-size pieces)
Salt and Pepper (to taste)
Directions:
Throw it all together in a big pot. Fill with water or broth until covered. Bring to a boil and cook until lentils are soft (about 45 minutes.) It's toooooo yummy and it's guaranteed to warm you up!
