Cream: (seriously cream for about 5-7 min until creamy white color, the culinary student who gave me this recipe gave me this tip and I found it makes such a big difference when baking)
12 oz. Butter
7 oz. Sugar
4 oz. Brown Sugar
Add:
2 egg yolks
2 tsp. Vanilla
8 oz. Molasses
Sift together and add to wet:
4 1/2 C. Flour
1 T. Ginger
2 1/2 tsp. Baking Soda
2 tsp. Cinnamon
1 tsp. Allspice
1 tsp. Ground Mustard
1 tsp. Salt
1 tsp. White Pepper
Mix together just until comined. Form small balls, roll into sugar, push w/ two fingers to just flatten the top. Bake at 350 for 8-10 minutes.
Cool and keep airtight.
