Basic Breakfast Crepes


INGREDIENTS
1 cup all-purpose flour
2 eggs
1/2 cup milk
1/2 cup water
1/4 teaspoon salt
2 tablespoons butter, melted

DIRECTIONS
In a large mixing bowl, whisk together the flour and the eggs. Gradually add in the milk and water, stirring to combine. Add the salt and butter; beat until smooth.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.
Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Serve hot.


I also add about an 1/8 cup of sugar and a teaspoon of vanilla to sweeten them up a little. The vanilla in the batter makes a yummy aroma at breakfast time!

Toppings....This is where you get to be creative! Here are some things we have tried:
Maple Syrup
Smuckers Boysenberry and Strawberry Syrup with whip cream
Butter and powdered sugar (put butter on crepe while its hot so it can dissolve the powdered sugar)
Banana Pudding, Whip Cream, Banana slices (tastes like Banana Cream pie)
Peaches, Strawberries and Blueberries

When we were in France here are some of the crepes we tried:
Nutella
Nutella and Bananas
butter and regular sugar
egg, ham and cheese (breakfast sandwich)


You can also make crepes as a dessert...they are yummy with ice cream in them with chocolate and caramel drizzled over.

We also like yogurt and fruit or peanut butter and jelly on our crepes.
