This is a great dip to take to any upcoming holiday parties - it's quick, easy, and delicious.
2 packages cream cheese (I use the low fat neuchftal cheese or whatever that is)
1 package ranch seasoning
1 can corn, drained
1 can olives, drained and chopped finely
1 can diced green chilis with as little juice as possible
1 red pepper, chopped
Stir everything together and serve with tortilla chips. Delish.

Tomato & Basil Bruschetta
9 grape tomatoes, cut in 1/2
4 cloves of garlic, pressed
1/3 cup olive oil
1 Tbsp balsamic vinegar
3 Tbsp chopped basil
3/4 tsp salt
3/8 tsp fresh cracked pepper
Fresh grated parmesan cheese
French Bread - Baguette
Whisk together pressed garlic, vinegar, salt, pepper and basil.
When combined, slowly drizzle in the olive oil.
Add the tomatoes and let sit for 20 minutes at room temp.
Place the bread on a cookie sheet with the Bruschetta spread on it and sprinkle with parmesan cheese.
Put it under the broiler til the cheese melts. Serve immediately.
